Finnish Pancakes

Finnish Pancakes (Soufflé-Style)


4 tablespoons (1/2 stick) butter
4 large eggs
3 tablespoons sugar
¾ teaspoon salt
¼ cup + ½ cup flour
2 cups milk
Cooking spray
maple syrup, fruit preserves, powdered sugar, or apple butter (to taste)
HAM VARIATION: Reduce sugar to 2 tablespoons and add 1 cup chopped ham.


Preheat oven to 450°. Cut butter into pieces, put in microwave-safe dish (e.g., glass measuring cup), and melt in 2 x 30 second intervals.

Add eggs, sugar, and salt to large bowl and beat. Add ¼ cup of the flour and beat again until smooth. Alternate adding milk and remaining flour, beating in between, until the mixture is smooth and all the milk and flour has been added. Pour melted butter and mix in. Spray 9" x 13" baking pan/dish with cooking spray and pour batter into it. (For HAM VARIATION, sprinkle the ham evenly into the batter after pouring it into the baking dish.). Bake for 18-23 min.

Serve with maple syrup, fruit preserves, powdered sugar or apple butter (I typically spread a light amount of apricot preserves over the top of each serving then sprinkle with powdered sugar).

This dish is not quite pancakes, not quite French toast, not quite a soufflé, but really rich and yummy. 4 servings. Serves 2-4 adults.
