Banana Nut Bread


1¾ cups all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
½ cup shortening
2 eggs, slightly beaten
1 cup mashed bananas (about 2 very ripe medium bananas)
½ cup coarsely chopped pecans, almonds or walnuts


Preheat oven to 350º F. Spray a 9 x 5-inch non-stick loaf pan with Pam.

Mix first 5 ingredients in large bowl with fork. Cut in shortening until mixture resembles coarse crumbs. With fork, stir in eggs and bananas just until blended. Stir in nuts. Spread batter evenly in pan.

Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes; remove from pan and cool completely on rack. Makes 1 loaf.
